Wild Turkey Soup

1 to 2 pounds of chopped leftover turkey
1/4 cup butter
1/2 cup diced purple onion
1/2 cup celery
1 garlic clove
1/2 cup sliced mushrooms
1 box of chicken stock or chicken broth
2 cups water
1 tsp. sage
1 tsp. thyme

Melt butter and saute purple onion, celery and garlic until translucent. Add mushrooms to purple onion, celery and garlic and saute for 2 minutes. Pour chicken stock, water, sage and thyme into pan with other ingredients. Bring to a boil and simmer for at least 30 minutes.

Option: Cook rice and place it in the bottom of the soup bowl. Add shredded mozzarella cheese on top of soup.

Why the resolution?

Well, I have a flaw. Ok, I have more than one flaw, but this is a biggie. I don't like to cook. I'm not a planner, and it never fails that I won't have all the ingredients to a recipe.

Because of this flaw, it makes our family bring home dinner more than I like to admit. We spend too much money on pre-made meals, and I know the food is not good for our bodies.

So, my "resolution" for 2010 is the cook at least 5 nights a week. Wednesday is our Sonic night because we have Awana at 6:00 pm, so it is a definite no cook night. Other than Wednesday, I'll be cooking something in the kitchen. I will cook using more fresh ingredients than boxed or canned food.

I will post my more successful meals and to give you something to laugh at when I have a completely unsuccessful meal. Also, I'll have reviews from my boys on the meals I prepare. I hope throughout the year I gain a love for cooking. It would be awesome to look forward to the process. Wish me luck as I tackle something I've avoided throughout most my married life...COOKING!
